Festivals are an integral part of Ecuadorian life. Before the Spanish conquest, they were organized according to the solar cycle and the agricultural calendar. The church then incorporated those of the indigenous communities with their own holidays. Therefore, today they consist of a mixture of indigenous beliefs and traditions based on the Catholic faith.
There are parades of all types, processions, masses and pilgrimages. The most important festival is the carnival where the local specialty is to fill water balloons and soak them. Holy Week processions are always very colorful, especially in Quito.
The main tradition is to eat fanesca, a soup made without meat that contains 12 ingredients that symbolize the 12 apostles. The main holiday for indigenous communities is November 2, which symbolizes the Day of the Dead. According to beliefs, the spirit of a dead person visits the living family and feeds before continuing his journey to reincarnation. To this end, many dishes are prepared with small figures made of bread, which are placed on the grave of the deceased.
